There’s something special about baking little tasty bites during the cold season. I think it’s a mix between baking being so relaxing and satisfying, days becoming shorter, and the need for enjoying warm drinks in your own little cozy corner with a good book getting higher. And I don’t know why, but the smell of freshly baked spiced honey biscuits in our little apartment just makes gloomy days much more better.
I’ve most recently baked these biscuits for ‘trick or treat’. Since this year going ‘trick or treating’ through the neighbourhood was not an option, we had a couple of friends from our close circle coming over with their children. So I had to bake some treats for them. One of them were these spiced honey biscuits, that were a huge hit among the kiddos.
I also find these small treats really nice around Christmas. Such a nice activity to have in the kitchen with the little ones. They’ll love cutting out the biscuit shapes and bake on their own cookies for Santa. And you actually don’t even need a special occasion to bake these biscuits. They’re just super nice next to your afternoon tea or with some hot cocoa after dinner. So what are you waiting for?
Ingredients (for about 30pcs. – 1 oven tray full)
- 180g flour
- 50g butter
- 100g honey
- 1 egg
- 1/2 tsp baking soda
- a pinch of salt
- 1tbsp all spice (or you can make your own mix – I used cinnamon, nutmeg and cardamom)
- 1tsp orange zest (fresh or from your citrus preserve)
Tools
- silicone spatula/spoon
- a whisk
- cling film
- biscuit shape cutter/s
Instructions
1. In a medium bowl weigh the flour, then add the baking soda and the spices. Mix with a fork and set aside.
2. Melt the butter on low-medium heat. Remove from heat, add the honey and mix with a whisk until combined.
3. Add the egg, salt and orange zest to the bowl with flour. Then pour the butter-honey mixture on top of it and mix with a silicone spoon/spatula, until combined. Place the dough on a cling film, and set to rest in the fridge for at least one hour (I usually leave it over night).
4. Preheat the oven to 175C. Take the dough out from the fridge and roll it on a flour dusted surface, about 0,5cm thick. Cut the biscuits with the shape cutter/s and place on the oven tray lined with baking paper. Bake at 175C no fan for 9-10 minutes. Let the spiced honey biscuits cool down and enjoy next to some hot cocoa or mulled wine 🙂 (’tis the season afterall)
You’ll most likely have some dough left. Just wrap it in plastic film and set in the freezer, and you’ll have some for a later quick bake.
